Enjoy the Taste of Eating Right

eatingHappy Spring! Through the raindrops we can start to see a glimpse of new life, with fleeting rays of sunshine and the tiny green tips of bulbs peeking through the soil. We can start hanging up our heavy winter jackets and begin dusting off our running shoes. Another reason to celebrate?  Last month was National Nutrition Month, and the Academy of Nutrition and Dietetics announced that their theme for this year’s campaign is Enjoy the Taste of Eating Right. The Academy invites us to take a step back, to remember why we ultimately choose the foods we do. Yes, supporting our metabolism and choosing foods that promote health and longevity are keys to eating right. Yes, choosing foods that are sustainable and encourage environmentally friendly business practices is a great way to give back to the earth through nutrition. And yes, choosing nutrient-dense, whole foods that are far superior to processed foods will ultimately benefit your health the most in the long run. But…

What about the taste? Isn’t that just as important? Regardless of the many health benefits of choosing local, organic berries when they are in season, isn’t the sweet, juicy taste of summer the reason we really enjoy this fruit, when it comes down to the actual bite? And the fresh, earthy flavor of sliced beets on top a salad of crisp mixed greens and warm roasted nuts… Nothing tops the power that taste has on our memories of good foods and the satisfaction we get from the meals we create and share with others. So this season, be mindful of what you taste. Take the time to appreciate the sweet crunch of a fiddlehead fern, or the flavor in your asparagus.  Spring is full of new produce, fresh herbs, and wonderful opportunities to try out some new recipes. Experiment with some new foods from the garden, or re-discover your old favorites. Either way, remember to always celebrate food and enjoy the taste of eating right!
